My Go To Chocolate Chip Pancake Recipe
I am 110% a breakfast and dessert person! Chocolate Chip pancakes are essentially the fusion of breakfast and dessert because it’s just a chocolate chip cookie that’s acceptable to eat first thing in the morning. I love this recipe because it’s perfect for 1-2 people and relatively quick and simple to make without getting many things dirty even though it’s made from scratch.
Makes about 8 pancakes
Ingredients
1 egg
1/2 cup (125g) milk
5/8 cup (100g) self-raising floor
pinch sugar
pinch salt
5 Tablespoons (60-75g) chocolate chips
Method
- Beat together egg, milk, sugar, and salt
- Stir in flour just until combined careful not to over mix
- Fold in chocolate chips
- Heat a little butter or oil in a skillet over low to medium heat
- Using about 1/4 cup batter for each pancake cook for 2-3 minutes or once bubbles start to form on the surface before flipping and cook for another 1-2 minutes until golden brown
